錦繍の秋、澄み渡る空に一層心も晴れやかに感じられる季節となりました。皆様お健やかにお過ごしのことと存じます。
この度、令和７年１１月１１日、御所南の地で自身の店である「ちさき」を開店する運びとなりました。
世界を一人で旅していた時、お鮨屋さんになればきっとこの世界のどこでも生きていくことができる、そう思い職人の道へと飛び込みました。
その後、素晴らしい方々との幸運な出会いに導かれ、次第に私は鮨という食べ物の奥深さにどんどん魅了されていきました。
修行を始めてから８年、丹精込めて仕込んだシャリと魚を、最後に職人の手で触れることで完成とするその所作こそ鮨の神髄であり、それはある種の祈りであると感じさせられる師匠と出会いました。
そしていつしか私は、故郷の京都で自分の店を持ちたいと思うようになりました。
今日、これまでご縁を頂きました沢山の皆様の支えとお心添えを頂き、こうして開店のご挨拶をさせていただくこと、感謝の想いでいっぱいです。
今でも常に自分の中にいる、「好奇心に目を輝かせバックパックひとつで世界を旅している私」と共に、職人として、一人の人間として、日々精進して参ります。これからもどうぞ末永くお付き合いをよろしくお願いいたします。

The season of vibrant autumn colors has arrived, and the clear blue skies make one's heart feel even more cheerful. I trust you are all in good health.
I am pleased to announce the opening of my own restaurant, “Chisaki,” in the Gosho-minami area.
While traveling the world alone, I thought that if I became a sushi chef, I could surely make a living anywhere in this world. That thought led me to dive into the path of the artisan.
After that, guided by fortunate encounters with wonderful people, I gradually became more and more captivated by the profound depth of sushi.
Eight years into my apprenticeship, I met a master who taught me that the very essence of sushi lies in the final act: the artisan's hands touching the rice and fish prepared with utmost care to complete the dish.
He made me feel that this act is a kind of prayer.
And before I knew it, I found myself wanting to open my own restaurant in my hometown of Kyoto.
Today, filled with gratitude, I extend my opening greetings, supported by the kindness and encouragement of the many people who have crossed my path.
Alongside the version of myself that remains ever-present—the one whose eyes sparkle with curiosity, traveling the world with just a backpack—
I will continue to strive daily, both as a sushi chef and as a person. I sincerely hope for your continued patronage in the years to come.
I sincerely look forward to the day we meet again.
